You didn't cook fish. But your air fryer smells like you did.
It's a common complaint, and it's almost never about the last meal you made. The fish smell in air fryers comes from a few specific sources — and once you know them, you can fix them permanently.
What's Actually Causing the Smell
1. Polymerized Grease on the Heating Element
This is the #1 cause. Every time you cook, grease vapor rises and lands on the heating coil. At high temperatures, it doesn't evaporate — it polymerizes. It builds up in invisible layers that turn rancid and produce a smell reminiscent of old fish.
Fix: Monthly wipe-down of the heating element with a barely damp microfiber cloth (unplug the unit first).
2. Food Residue Trapped in the Mesh
Air fryer baskets have fine mesh perforations. Food particles — especially batter, breading, and small pieces — get trapped inside the mesh during cooking. As covered in our full air fryer cleaning guide, this is a common oversight.
Fix: After the basket cools, use a soft brush (a toothbrush or soft-bristle cleaning brush) to work debris out of the mesh holes.
3. Residual Detergent
Soap residue can go rancid when heated. If you use harsh dishwasher detergent or don't rinse thoroughly, this produces a sour fish-like odor.
Fix: Double-rinse after hand-washing. Skip the high-temp dry cycle in the dishwasher.
4. Stored While Damp
Putting a still-wet air fryer basket back in the unit creates a humid environment where odor-producing bacteria thrive.
Fix: Always dry the basket completely before reassembling and storing.
How to Do a Deep Deodorize
- Unplug the unit.
- Remove and clean the basket and rack with hot soapy water + baking soda soak (2 tbsp in hot water, 30 min).
- Use a soft brush to clean mesh holes thoroughly.
- Wipe the heating element with a barely damp microfiber cloth.
- Wipe the interior walls with the same cloth.
- Run the empty air fryer at 400°F for 5 minutes.
- Let it cool, then wipe the interior again.
How to Prevent the Smell From Coming Back
- Use a silicone liner. This is the single biggest change. A liner like FryGuard sits in the basket and stops grease and food from reaching the element and mesh. See how silicone liners compare to parchment paper → · Compare all liner options →
- Brush the mesh after every cook. 30 seconds now prevents days of buildup.
- Wipe the element monthly.
- Store dry.
Skip the scrubbing.
